Barbecued-Beef Potato Topper
- 1 tsp. vegetable oil
- 1 1/2 c. very coarsely chopped green bell pepper
- 1 c. thinly sliced onion
- 1 c. ground beef
- 1 can tomato sauce
- 13 c. bottled barbecue sauce
- 1 can whole-kernel corn
- Heat oil in a large nonstick skillet.
- Stir in green pepper and onion.
- Cook 2 to 3 minutes, stirring often, until onions are limp.
- Add beef and cook 4 to 5 minutes, breaking up meat with a spoon, until meat is no longer pink.
- Stir in remaining ingredients, reduce heat, cover and simmer 6 to 8 minutes until flavors are blended.
