Mango Glazed Pork

  1. Trim visible fat from pork.
  2. In a large nonstick skillet, brown pork about 5 minutes on each side, or until no pink remains.
  3. Remove pork from skillet.
  4. For sauce, cook and stir onion in oil in same skillet for 2 to 3 minutes or until tender.
  5. Stir in brown sugar; cook 1 minute.
  6. Add mango puree and mustard; stir until well blended.
  7. Cook until thoroughly heated, stirring occasionally.
  8. Remove from heat; cool.
  9. Stir in cilantro.
  10. Cook green beans and potatoes according to package directions.
  11. Serve sauce over pork chop with mashed potatoes and green beans.
  12. Enjoy fresh grapes for dessert.
