Mango Glazed Pork
- 3 oz. pork tenderloin, cut into strips (trimmed of visible fat)
- 2 tsp. mincedchopped onion
- 1 tsp. vegetable oil
- 2 Tbsp. firmly packedpacked brown sugar
- 2 oz. pureed mango
- 2 Tbsp. GREY POUPON Savory Honey Mustard
- 2 tsp. choppedfresh cilantro
- 1/2 cup frozen cut green beans
- 3/4 cup mashed potatoes
- 1 cup red or green grapes
- Trim visible fat from pork.
- In a large nonstick skillet, brown pork about 5 minutes on each side, or until no pink remains.
- Remove pork from skillet.
- For sauce, cook and stir onion in oil in same skillet for 2 to 3 minutes or until tender.
- Stir in brown sugar; cook 1 minute.
- Add mango puree and mustard; stir until well blended.
- Cook until thoroughly heated, stirring occasionally.
- Remove from heat; cool.
- Stir in cilantro.
- Cook green beans and potatoes according to package directions.
- Serve sauce over pork chop with mashed potatoes and green beans.
- Enjoy fresh grapes for dessert.
