Breakfast Kugel - Sweet noodle pudding

  1. Prepare pasta according to package directions, drain and rinse in cold water.
  2. In a food processor or blender, puree the cottage cheese and mix in vanilla and salt.
  3. Mix cinnamon with apples.
  4. Mix raisins into apple sauce.
  5. Spray a 9 inch x 13 inch x 2 inch baking dish with vegetable cooking spray.
  6. Starting with lasagne, layer lasagne, applesauce mixture, cottage cheese mixture and apples, ending with a layer of lasagne.
  7. Top with cheddar cheese.
  8. Bake at 350 degrees (175 C.) for 45 minutes, or until apples are tender and cheese is bubbly.
  9. Serve hot or cold, or re-heat in the microwave.
