sig's Spicy Beetroot (Taridar Chukandar)
- 800 grams fresh raw beetroot
- 3 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 bay leaf
- 1 can best chopped tomatoes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp ground turmeric
- 1/4 tsp chilli powder
- 3/4 tsp salt or salt substitute
- 1/2 tsp sugar
- 300 ml water
- Peel and clean beetroot and cut them into 1 inch chunks
- Put oil into large pan and heat, when hot put in the bay leaf and seeds, after a few seconds when leaf has darkened add all other ingredients stir gently and add 300 ml water
- Stir and gently simmer for 30-40 minutes until tender.
- Remove bay leaf and serve with juices
