Banana Bread with Walnuts and Flaxseed

  1. Preheat the oven to 350F.
  2. Butter a 9 x 5 x 3-inch loaf pan, and set aside.
  3. Whisk together the flours, flaxseed, salt, baking powder, and baking soda in a medium bowl, and set aside.
  4. Put the egg and egg white in the bowl of an electric mixer fitted with the paddle attachment, and mix on medium-low speed until well combined, about 2 minutes.
  5. Add the melted butter, sugar, vanilla, and bananas, and mix until combined.
  6. Add the reserved flour mixture, and mix on low speed until well incorporated, about 10 seconds.
  7. Stir in the walnuts.
  8. Pour the batter into the buttered pan.
  9. Bake until golden brown and a cake tester inserted into the center comes out clean, about 35 minutes.
  10. Let cool slightly in the pan on a wire rack.
  11. Unmold onto rack, and let cool completely.
