Peach Fans on Blackberry-Lime Sauce
- 3/4 cup all-fruit seedless blackberry spread (about 8 ounces)
- 2 tablespoons lime juice
- 1/4 teaspoon grated peeled gingerroot (optional)
- 1 1/4 to 1 1/2 pounds peaches
- 18 whole medium strawberries with stems (about 1 pint)
- In a small saucepan over medium-high heat, heat the blackberry spread for 1 to 2 minutes, or until just melted, whisking constantly.
- Remove from the heat.
- Whisk in the lime juice and gingerroot.
- Transfer to a small bowl.
- Cover and refrigerate for 30 minutes to 24 hours.
- Peel and slice the peaches.
- Halve the strawberries lengthwise.
- If you cut the stem in half, too, youll have a prettier presentation.
- Spoon 2 tablespoons blackberry mixture onto the center of a salad or dessert plate.
- Rotate the plate to spread the sauce to about a 6-inch circle.
- Alternating peaches and strawberries, arrange the fruit accordion-style on the sauce.
- Repeat for each serving.
- Replace the blackberry spread with seedless raspberry spread and omit the lime juice.
- Replace the peaches with 2 large pears, and replace the strawberries with 3 peeled green kiwifruit, each cut lengthwise into sixths.
- You can slice peaches or pears up to 1 hour in advance.
- To prevent browning, stir in 1 to 1 1/2 tablespoons lime juice.
- (Even though theres no lime juice in Pear Fans on Raspberry Sauce, you can treat the pears with some to keep them from turning brown.)
- Dont stir.
- Cover with plastic wrap and refrigerate.
- Too much lime juice will cause the fruit to cook and become mushy.
- Arrange the fruit slices immediately before serving.
