Peanut Butter Oatmeal Chocolate Chip Cookies
- 1/2 cup butter plus 2 tablespoons
- 1/2 cup peanut butter plus 2 tablespoons
- 3/4 cups brown sugar firmly packed
- 1/2 cup sugar
- 1 each eggs
- 1 teaspoon vanilla extract
- 1 1/2 cup flour, all-purpose
- 1 teaspoon baking soda
- 1 teaspoon salt optional
- 3 cups rolled oats old-fashioned, uncooked
- 12 ounces chocolate chips (semi-sweet)
- Heat oven to 375F (190C).
- Beat butters and sugar until fluffy.
- Beat in egg and vanilla.
- Add combined flour, baking soda and salt.
- Mix well.
- Stir in oats and chocolate chips.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie.
- Cool 1 minute on cookie sheet, remove to wire rack, cool, store tightly covered.
- Makes 4 1/2 dozen cookies.
