Breakfast Potatoes

  1. in medium sized pot, heat oil with minced garlic and onion.
  2. chop potatoes into small cubes.
  3. skins can be peeled if desired.
  4. add cubes of potatoes to oil and add seasonings.
  5. cover and cook over medium heat for 30 minutes, stirring occasionally.
  6. potatoes are done when they are soft.
  7. remove from heat and place in paper towel lined bowl.
  8. let sit in bowl for 10 minutes allowing excess oil to drain from potatoes.
  9. can be served topped with cheese, bacon, sour cream, and green onions.
