Breakfast Potatoes
- 6 medium potatoes
- 2 tbsp meat tenderizer
- 1 tbsp minced onion
- 2 tbsp minced garlic
- 1 pinch ground black pepper
- 1 pinch sea salt
- 1/3 cup vegetable oil
- in medium sized pot, heat oil with minced garlic and onion.
- chop potatoes into small cubes.
- skins can be peeled if desired.
- add cubes of potatoes to oil and add seasonings.
- cover and cook over medium heat for 30 minutes, stirring occasionally.
- potatoes are done when they are soft.
- remove from heat and place in paper towel lined bowl.
- let sit in bowl for 10 minutes allowing excess oil to drain from potatoes.
- can be served topped with cheese, bacon, sour cream, and green onions.
