Bing Pi Yue Bing - Rose Daifuku

  1. Prepare the ingredients.
  2. Put all the ingredients except for the anko into a dish and mix.
  3. Wrap with plastic wrap and microwave for 2 minutes.
  4. Remove from the microwave and mix, wrap again, and heat for another 2 minutes.
  5. Let cool covered with the plastic wrap until cool enough.
  6. Divide into 4 pieces to fit the molds.
  7. Divide the anko into 4 as well and roll into balls.
  8. Dust the molds with cornstarch.
  9. Wrap the anko in the mochi dough.
  10. Pack into the mold.
