Lemon Yogurt Cake

  1. Grease loaf pan, cover base with baking paper.
  2. Combine butter, rind, sugar, eggs, flour and yogurt in medium bowl of electric mixer.
  3. Beat on low speed until ingredients are combined.
  4. Then beat on medium speed until mixture is smooth and changed in colour.
  5. Stir in mixed peel.
  6. Spread mixture into prepared pan.
  7. Bake in moderate oven about 1 hour.
  8. stand few minutes before turning onto wire rack to cool.
  9. Top cold cake 1/2 quantity Cream frosting and extra mixed peel, if desired.
