Homemade Sriracha (Smokey Rooster Sauce)

  1. Assemble all of your ingredients.
  2. Add vinegar, water, salt, garlic powder, and sugar to a saucepan.
  3. Bring the brine to a boil, allowing the garlic powder to bloom and the salt and sugar to dissolve.
  4. Add the can of chipotles in adobo sauce to a blender.
  5. Pour in the hot vinegar brine and pulse to desired consistency.
  6. Decant into suitable containers that have been washed, soaked, and sanitized in a soapy, weak, bleach solution.
  7. Cool and store.
  8. Use anywhere you would use sriracha.
