Homemade Sriracha (Smokey Rooster Sauce)
- 11 oz can of Chipotle Peppers in Adobo
- 1/2 cup strong white vinegar
- 1/2 cup water
- 1 tsp table salt
- 2 1/2 tbsp white sugar
- 1 1/2 tsp garlic powder
- Assemble all of your ingredients.
- Add vinegar, water, salt, garlic powder, and sugar to a saucepan.
- Bring the brine to a boil, allowing the garlic powder to bloom and the salt and sugar to dissolve.
- Add the can of chipotles in adobo sauce to a blender.
- Pour in the hot vinegar brine and pulse to desired consistency.
- Decant into suitable containers that have been washed, soaked, and sanitized in a soapy, weak, bleach solution.
- Cool and store.
- Use anywhere you would use sriracha.
