Penne with Chicken and Southwest Cheese Sauce
- 6 tbsp Butter
- 1/2 cup Finely chopped onion
- 1 clove Minced garlic
- 1/3 cup All purpose flour
- 1 cup Half and half
- 1 cup Hot water
- 1 Salt to taste
- 1/4 tsp Cayenne pepper
- 1/2 tsp Hot sauce
- 1 tbsp Lemon juice
- 1/3 cup Parmesan cheese
- 1/3 cup Velveeta cheese
- 3/4 cup Medium salsa
- 1/2 cup Sour cream
- 5 Boneless Skinless Chicken Breast
- 1 Cajun Seasoning to taste
- 2 Green onions chopped
- 1 box Penne pasta
- Melt butter and saute onion and garlic until onions are translucent
- Add flour and stir.
- Cook for 5minutes stirring constantly
- Mix half and half and water and slowly add mixture to flour mix.
- Stir or whisk constantly until mixture is smooth.
- Cook for 3minutes
- Add salt, cayenne, lemon juice and hot sauce.
- Stir well and add parmesan cheese
- Do NOT boil
- Add Velveeta cheese
- Once cheese is melted add salsa and stir.
- Add sour cream
- Season Chicken breasts generously with Cajun Seasoning and Broil 8-10 minutes per side or until done
- Cook pasta according to package directions
- To serve, laddle cheese sauce over some noddles (just enough to coat it), stir well, top with sliced chicken.
- Garnish with green onion
