Penne with Chicken and Southwest Cheese Sauce

  1. Melt butter and saute onion and garlic until onions are translucent
  2. Add flour and stir.
  3. Cook for 5minutes stirring constantly
  4. Mix half and half and water and slowly add mixture to flour mix.
  5. Stir or whisk constantly until mixture is smooth.
  6. Cook for 3minutes
  7. Add salt, cayenne, lemon juice and hot sauce.
  8. Stir well and add parmesan cheese
  9. Do NOT boil
  10. Add Velveeta cheese
  11. Once cheese is melted add salsa and stir.
  12. Add sour cream
  13. Season Chicken breasts generously with Cajun Seasoning and Broil 8-10 minutes per side or until done
  14. Cook pasta according to package directions
  15. To serve, laddle cheese sauce over some noddles (just enough to coat it), stir well, top with sliced chicken.
  16. Garnish with green onion
