Caramelized Onions

  1. Peel the onions, cut in half crosswise and slice into 1/2-inch wedges.
  2. Set aside.
  3. Heat the olive oil in a Dutch oven or electric skillet over medium-high heat for 30 seconds.
  4. Add onions, and cook for 3 minutes, stirring frequently.
  5. Reduce heat, add vinegar and sugar, and cook, stirring frequently, for about 45 minutes or until caramelized.
