Frank'S Shrimp Creole
- 1/4 c. butter
- 2 medium onions, chopped
- 1 c. diced celery
- okra
- 1 clove garlic, minced
- 1 green pepper, chopped fine
- 1/2 lb. fresh mushrooms, sliced
- 2 Tbsp. flour
- 1 Tbsp. vinegar
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 1/4 tsp. paprika
- 1 tsp. chili powder
- 1 bay leaf
- 1 can stewed tomatoes plus as much water
- 1 small can tomato paste
- 1 1/2 to 2 lb. cooked shrimp, peeled
- Cook in deep frypan (electric or regular).
- Add butter and melt.
- Add onions, celery, okra, garlic, green pepper and mushrooms.
- Saute until tender.
- Blend in flour and seasonings. Add tomatoes and tomato paste; cover and simmer for about 10 minutes over medium heat.
- Stir.
- Add shrimp.
- Serve over hot rice.
