Pumpkin Cake With Cream Cheese Frosting
- 1 12 cups brown sugar
- 4 eggs
- 1 cup white flour
- 12 teaspoon salt
- 2 teaspoons baking soda
- 1 14 cups vegetable oil
- 2 cups canned pumpkin
- 1 cup whole wheat flour
- 1 tablespoon cinnamon
- 8 ounces neufchatel cheese, softened
- 12 cup butter, softened
- 1 cup confectioners' sugar (more or less to taste)
- 1 teaspoon vanilla extract
- Preheat oven to 350.
- Blend sugar and oil.
- Beat in eggs until light.
- Add pumpkin and mix well.
- Combine dry ingredients.
- Gradually add to pumpkin mixture and mix thoroughly.
- Pour into a lightly greased 9X13 pan.
- Bake 30-40 minutes.
- Cool on wire rack.
- Beat remaining ingredients for frosting and frost cake when cool.
- Store in refrigerator.
