Grilled Onion-Cheese Sandwich

  1. Pour into a pot the vegetable oil and the butter.
  2. Cut the onion into wide half-moon slices and put it into the pot.
  3. Add salt & pepper.
  4. Cook them slowly and move the content constantly.
  5. Once caramelized, add the Sherry wine and the thyme finely chopped.
  6. Move the content until the wine redeces.
  7. Place a thick slice of gruyere cheese and a spoonful of caramelized onions between two slices of bread and butter the outsides.
  8. Place on the griddle and cover with a metal bowl.
  9. Turn the sandwich and cover it again.
  10. Once the cheese is melted, remover from the griddle and serve.
