Simply The Best Strawberry Cake Ever
- 1 box Duncan Hines Strawberry Cake Mix
- 3 eggs
- 1/3 cup Canola Oil
- 1 cup reserved strawberry juice (add water if needed to make full cup)
- 1 frozen strawberries in juice/syrup (drained and dried) 16 oz container
- 1 box cream cheese 8 oz
- 1 stick butter
- 1 tsp vanilla
- 1 box powdered sugar 1lb
- First....thaw strawberries and drain in a collendar over a bowl to catch the liquid.
- After well drained, spread the strawberries out on several layers of paper towels...cover with paper towels to dry as much as possible.
- Mix the cake as directed using the reserved strawberry juice in place of the water.
- Bake as directed...I have done 9x13, layers and cupcakes...all work fine.
- After cake cools, make frosting by mixing butter and cream cheese well.
- Add vanilla and dried strawberries, mix well.
- Add powdered sugar a bit at a time and beat until creamy.
- Frost cake and refrigerate for best flavor and texture.
- Frosting will be soft and lovely!
