Nick's Fish Tacos
- 1 lb. flaky white fish such as tilapia
- halibut
- 1/2 cup citrus marinade
- 8 md. size corn
- flour tortillas
- 1/4 head of cabbage, shredded like slaw
- 1 tomato, diced
- 1 mango, diced
- 1 avocado, diced
- 1/4 cup mayonaise
- 1/2 cup salsa
- 1/2 cup cilantro, chopped
- 1 mexican lime, juiced
- 2 mexican limes, quartered
- Tapatio to taste
- Cut up the fish into 1-inch cubes and marinate while you chop the veggies, about 20 minutes.
- Mix the mayonaise, lime juice and salsa in a small bowl.
- Heat large skillet over medium heat.
- Add fish and marinade liquid.
- Cook until fish is white all the way through, about 10 minutes.
- In second skillet or over open gas flame, heat the tortillas one at a time.
- Fill with cooked fish, a little of each veggie and two spoonfuls of the mayo & salsa mixture.
- Garnish with lime and Tapatio to taste.
