Stuffed redpepper pork loin
- 1 medium 4 lbs Pork loin
- 1 large rep pepper
- 1/2 large white onion
- 1/2 can sweet corn
- 3 clove garlic
- 1 tbsp chopped rosemary
- 1 dash ground cayenne pepper
- 1 dash oregano
- 1 tsp lemon pepper
- 1 dash paprika
- 1/4 cup salted butter
- 1/2 cup grated sharp cheese
- 1 dash black pepper
- 1 dash salt
- 3 chopped bay leaves
- 1/2 cup water
- Preheat oven 325F
- Dice the onions , garlic, and redpepper .
- Add them into a medium bowl .
- In the medium bowl add the seasonings and stir.
- Then shake in the grated cheese and thinly chopped butter .Then set aside .
- Rinse pork loin and lay out on large cutting board .
- Butterfly cut the pork loin into a square .
- ( look up how I did its easy)
- Spread the veggie filling slong the loin leaving about a half inch on all sides.
- Roll the loin into large roll fat side down.
- Set 8 strings under the loin and tie the strings to hold the loin together.
- Start on the left 2 strings, then the right 2 strings and so on to insure an even cohesive wrapped loin
- Place loin in an oiled pan and shake a little extra pepper ontop.
- Add water to pan also .
- For moisture .
- Then finally place into oven for about 90 minutes or untill 165F .
- After 50 minutes glaze with oils on the bottom of pan .
- Take out let cool for 10 minutes glazing it one more time then cut into thin slices.
- Cut strings afterwards.
- Enjoy!
