Creamy Chicken and Spinach Pasta
- 1 tbsp oil
- 1 stick of butter
- 1 large onion, chopped
- 3 cloves of garlic, chopped
- dash of salt & pepper to taste
- bunch of fresh spinach leaves
- 500 grams Penne or any pasta noodle cooked as per instructions
- 1 can mushrooms, sliced/chopped
- 1/2 kg chicken breasts (boneless & skinless) sliced
- 2 cups of heavy cream
- 1 cup evaporated milk
- 100 grams cheddar cheese, grated
- 50 grams mozzarella cheese
- Add oil and 2 tablespoons of butter in skillet and heat to medium.
- Cook chopped onions until translucent and garlic until golden brown for about 3-5 minutes.
- Add chicken breasts and cook for about 10 minutes.
- Add mushrooms and cook for 3 minutes.
- Pour cream, milk and cheese.
- Simmer in low fire for about 10 minutes.
- Make sure to stir to every 3 minutes to avoid the cream from burning.
- Add spinach and cook for 3 minutes or until wilted.
- Serve over cooked pasta (use remaining butter).
