Slow Cooker Turkey & Dumplings

  1. Spray 5- to 6-quart slow cooker with no-stick cooking spray.
  2. Place onion, celery, carrots and bay leaf in slow cooker.
  3. Top with turkey breast half.
  4. Pour gravy over top.
  5. Cover; cook on Low heat setting 7-8 hours or until turkey is fork tender.
  6. Increase heat setting to High.
  7. Remove turkey and bones from slow cooker; discard skin and bones.
  8. Keep turkey warm.
  9. Stir vegetables and sauce.
  10. Combine baking mix, cheese and parsley in bowl; mix well.
  11. Add half & half.
  12. Stir just until moistened.
  13. Drop 8 rounded tablespoons of dumpling dough onto vegetables and sauce.
  14. Cover; cook 20-25 minutes or until dumplings are no longer doughy.
  15. Serve turkey with sauce and dumplings.
  16. Season with salt and pepper, if desired.
