Spinach Salad with Dried Cranberries and Almonds
- 3 tablespoons olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon salt
- Freshly ground black pepper to taste
- One 5-ounce bag (about 8 cups) baby spinach
- 1/2 cup dried cranberries
- 1/2 cup chopped roasted salted almonds
- To make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- In a separate bowl, combine the spinach, dried cranberries, and almonds.
- Pour the dressing over the salad and toss to combine.
