Easy Mini Frittata

  1. Heat oven to 350
  2. Add eggs and milk to a large bowl and scramble well with a whisk
  3. Chop a medium zucchini or yellow squash depending on which one you like and add to the bowl
  4. Chop a small onion and add to the bowl
  5. Add 1/2 cup cooked crumbled bacon.
  6. I like to use the real bacon bits.
  7. It's easier.
  8. Add 1 cup of shredded cheddar cheese
  9. Add the garlic.
  10. You can leave it out if you don't like garlic.
  11. I personally like it.
  12. Add the Italian seasonings
  13. Add the salt and pepper
  14. Stir all well
  15. Spray a muffin pan with cooking spray
  16. Add evenly to the muffin pan
  17. Cook at 350 for 30 minutes
  18. After you take out of the oven flip the frittatas out, if any stick slightly I use a butter knife to trace around the inside of the muffin pan and they usually fall right out.
  19. Cool for 5 minutes and enjoy.
  20. This is really easy to do and they taste great.
  21. Everything doesn't have to be exact and you can mix or substitute other ingredients as long as you keep the eggs, milk, and cheese.
  22. Left over veggies or meat work fine too.
