Rachael's famous meatloaf
- 2 lb hamburger
- 1/2 large super ripe tomato
- 1/2 large onion
- 2 tbsp chopped garlic
- 1/4 cup BBQ sauce (Sweet baby rays is my favorite)
- 3/4 cup dry stuffing mix
- 1 egg
- 1/4 cup chopped fresh oregano (can substitute dried for 2 tbsp)
- 5 tbsp brown sugar (light)
- 1/2 tbsp seasoning salt
- 1/2 cup BBQ sauce
- 1/4 cup ketchup
- 1 tbsp Apple cider vinegar
- 2 tbsp brown sugar
- Mix the meatloaf ingredients together and form into pan.
- I flatten the meatloaf to shape of the pan and create a 1/2 inches space between the perimeter of the pan and the meat.
- This allows the meat to cook more evenly and faster.
- Cook in oven at 350F for 30 minutes
- Add the topping evenly to coat the meatloaf and place back in oven for 10-15 more minutes.
