Pinwheel Meat Loaf Recipe
- 2/3 c. long grain white rice
- 1 c. (4 ounce.) shredded med. Cheddar cheese
- 2 tbsp. chopped parsley
- 1 egg, beaten
- 1/2 c. lowfat milk
- 1/2 c. soft bread crumbs
- 2 tbsp. instant chopped onion
- 1 1/2 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 1 1/2 lbs. lean grnd beef
- Prepare rice according to directions.
- Stir in cheese and parsley; set aside.
- Mix egg with lowfat milk, bread crumbs, onion, salt and pepper.
- Add in beef and mix well.
- Turn meat mix onto waxed paper and shape into a 10x12 inch rectangle.
- Proportionately spread rice mix over meat; press firmly, leaving 1 inch uncovered at each end.
- Roll meat up in a pinwheel, removing way paper.
- Place seam side down in shallow baking dish.
- Bake at 350 degrees for 40 to 50 min.
- Garnish with tomato catsup and grated cheese, if you like.
- Cut into thick slices and serve.
- Makes 8 servings.
