Marinated Shrimp in Avocado Halves

  1. Thaw shrimp, if frozen; set aside.
  2. In a medium size bowl, combine vinegar, lemon juice, salt, mustard, and pepper; set aside.
  3. In medium skillet, cook shrimp, half of the onion slices and garlic in 2 tablespoons hot oil over medium heat for 4-5 minutes or until shrimp is cooked.
  4. Stir occasionally.
  5. Remove onion and garlic with slotted spoon; discard.
  6. Add shrimp and remaining oil to vinegar mixture, along with remaining onion.
  7. Cover; stir occasionally.
  8. Chill overnight.
  9. To serve, lift shrimp and onion slices from marinade.
  10. Spoon into avocado halves.
