Green Tomato Relish

  1. Chop vegetables and sprinkle with salt.
  2. stir well; let set overnight (approximately 8 hours).
  3. stir and drain off salt water.
  4. mix vinegar, water, sugar, alum and turmeric; pour over chopped vegetables.
  5. tie pickling spice in rag and put in mixture.
  6. cook slowly for 2 hours, stirring often.
  7. put in sterilized, hot jars and seal while hot.
  8. process in a boiling water bath for 5 minutes.
  9. prep time includes overnight.
