Green Tomato Relish
- 2 gal.green tomatoes
- 1 medium head cabbage
- 6 green bell peppers
- 6 large onions
- 12 cup salt
- 2 cups white vinegar
- 1 cup water
- 1 cup sugar
- 12 teaspoon turmeric (optional)
- 1 (1 1/4 ounce) box whole mixed pickling spices
- Chop vegetables and sprinkle with salt.
- stir well; let set overnight (approximately 8 hours).
- stir and drain off salt water.
- mix vinegar, water, sugar, alum and turmeric; pour over chopped vegetables.
- tie pickling spice in rag and put in mixture.
- cook slowly for 2 hours, stirring often.
- put in sterilized, hot jars and seal while hot.
- process in a boiling water bath for 5 minutes.
- prep time includes overnight.
