Lemon tartlets

  1. Use ready made short pastry for this recipe.
  2. Place sugar,butter,rind and strained lemon juice into a saucepan cook slowly until sugar and butter is melted.
  3. Add the beaten eggs and cook until mixture is thick.
  4. Keep covered in fridge or put into clean jars with tight fitting lid.
  5. --------Pastry------.
  6. Cut out tartlets slightly larger than your tartlet tin.
  7. Bake blind for approx.
  8. 10 minutes at 175C degrees.
  9. Fill with lemon curd and return to the oven for another 10 minutes.
  10. Serve dusted with icing sugar.
