Brian Boitano's Black Bean Salsa
- 1 (15 ounce) can black beans, drained and rinsed
- 2 roma tomatoes, seeded and diced
- 1 (4 ounce) can green chilies (recommended ( Hatch)
- 1 garlic clove, chopped
- 1 avocado, halved, pitted and flesh diced
- 1 lime, juiced
- 1 12 teaspoons dried ancho chile powder
- 3 ounces queso fresco, about 1/2 cup crumbled
- 2 tablespoons canola oil
- 1 pinch salt & freshly ground black pepper
- 3 tablespoons cilantro, chopped
- Mix all ingredients to combine well.
- Serve!
