Cheesy Potato Pancakes

  1. Peel & grate potatoes to yield about 4 cups.
  2. Press excess moisture from the potatoes & pat dry with paper towels.
  3. Place in a large bowl.
  4. Whisk eggs in small bowl.
  5. Add to potatoes & mix well.
  6. Stir in flour, parsley, onion salt, & cheese.
  7. Heat oil in skillet.
  8. Shape potato mixture into patties.
  9. Add patties to hot oil in batches.
  10. Cook turning once, until browned, about 3 minutes per side.
  11. Place on paper towel lined plate to cool.
  12. Serve warm.
  13. Can serve with sour cream or any other desired garnish or condiment.
