Beef & Bean Chili
- 2 tablespoons vegetable oil
- 2 lbs ground beef
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cayenne pepper
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 4 tablespoons chili powder
- ground pepper
- 28 ounces diced tomatoes, undrained
- 14 ounces tomato sauce
- 19 ounces dark red kidney beans, rinsed
- 19 ounces black beans, rinsed
- 19 ounces chickpeas, rinsed
- 2 cups frozen corn
- Heat oil in a large pot.
- Brown together ground beef, onion, and garlic.
- Drain well.
- Add all remaining ingredients, including spices.
- Mix well and bring to a boil.
- Note: add corn closer to serving the chilli if you prefer a crunchier texture.
- Simmer uncovered for 30 min, stirring often.
- Cover and simmer for 60-90 minute Add tomato juice or water if consistency is too thick / simmer uncovered if too runny.
- Serve with biscuits / buns / bread.
