sig 's farmhouse spinach plait
- 500 grams Spinach
- 1 large tablespoon butter
- 350 grams leek , finely chopped
- 2 tsp chopped fresh thyme
- 300 grams , about 2 cups self-raising flour
- 1 tsp salt and pepper mix
- 1 good pinch ground nutmeg
- 4 pieces sundried tomato ,finely chopped (optional)
- 80 grams about 1 cup,finely grated parmesan cheese.
- 40 grams about 1/4 cup. fresh basil.ripped
- 150 grams about 3/4 cup, feta cheese ,crumbled
- 1 cup milk
- Add the spinach to pan with boiling water,boil for one minute and drain,rinse under cold water drain again,squeeze the water from spinach.
- Chop finely
- Heat butter in pan add leeks and thyme,cook until the leeks are soft,add spinach,cook stiringfor about 5minutes or unti all liquid has evaporated .cool.
- I add about 4 pieces of sundried tomato finely chopped at this point until spinach and tomato together
- Sift flour into medium bowl stir in parmesan,pepper,salt nutmeg ,basil,3/4 of the feta cheese,spinach mixture and just enough milk to a mix a soft ,sticky dough.
- Turn out onto floured surface and knead until smooth.
- Divide the dough into 3 pieces, shape into a just over a foot (36cm) sausages .Plait sausages together on a greased tray.
- Sprinkle with the remaining crumbled feta cheese.
- Bake in a moderate hot oven for about 40 minutes
