  1. Add the spinach to pan with boiling water,boil for one minute and drain,rinse under cold water drain again,squeeze the water from spinach.
  2. Chop finely
  3. Heat butter in pan add leeks and thyme,cook until the leeks are soft,add spinach,cook stiringfor about 5minutes or unti all liquid has evaporated .cool.
  4. I add about 4 pieces of sundried tomato finely chopped at this point until spinach and tomato together
  5. Sift flour into medium bowl stir in parmesan,pepper,salt nutmeg ,basil,3/4 of the feta cheese,spinach mixture and just enough milk to a mix a soft ,sticky dough.
  6. Turn out onto floured surface and knead until smooth.
  7. Divide the dough into 3 pieces, shape into a just over a foot (36cm) sausages .Plait sausages together on a greased tray.
  8. Sprinkle with the remaining crumbled feta cheese.
  9. Bake in a moderate hot oven for about 40 minutes
