Sauteed Beets With Butter

  1. Peel and grate beets.
  2. Put butter in a large skillet over medium-high heat.
  3. When its hot, add onion and cook until tender, about 5 minutes.
  4. Add the beets, and stir occasionally until tender and lightly browned, about 10 minutes.
  5. Garnish with parsley.
