White Chili (Crock-Pot)
- 1 lb boneless skinless chicken breast, cut into 1/2 cubes
- 1 medium onion, chopped
- 1 12 teaspoons garlic powder
- 1 tablespoon vegetable oil
- 2 (15 1/2 ounce) cans great northern beans, rinsed & drained
- 1 (14 1/2 ounce) can low sodium chicken broth
- 1 (4 ounce) can green chilies, chopped
- 1 teaspoon salt
- 12 teaspoon ground cumin
- 1 teaspoon oregano
- 12 teaspoon pepper
- 14 teaspoon cayenne pepper
- 1 cup nonfat sour cream
- 12 cup whipping cream (I use heavy cream sub)
- In a large saucepan, saute ckicken, onion, & garlic powder in oil until slightly browned & no longer pink.
- Add beans, broth, chilies, & seasonings after dumping chicken in the crockpot.
- Cook for 8 hours on low heat.
- Add sour cream & whipping cream when finished cooking.
- Enjoy!
