2012 Mincemeat Pie (No Sugar Added)
- 2 apples, grated
- 1 lemon, zest and juice
- 1 orange, zest and juice
- 1 cup walnuts, chopped
- 1 cup dates, chopped
- 1 cup raisins, chopped
- 1 cup fig, chopped
- 14 teaspoon nutmeg
- 14 teaspoon clove
- 14 teaspoon allspice
- 12 cup butter, frozen then grated
- 1 teaspoon bourbon vanilla
- 1 ounce crystallized ginger, chopped
- Mix all together and let sit, refrigerated, for about 24 hours.
- Bake in a double crust at 375 for 45 minutes to an hour.
- Eggnog cream: Make instant vanilla pudding with eggnog rather than milk.
- Mix equal parts of this and heavy whipped cream.
