Deep Fried Mozzarella Puffs Recipe

  1. Remove crusts from bread slices; cut each slice diagonally into quarters.
  2. Cut 40 pcs of cheese the same size and thickness of bread pcs.
  3. Beat together Large eggs, the first 1/2 c. Parmesan cheese, and salt.
  4. To assemble, coat bread pcs with flour, then dip in egg mix.
  5. Repeat with cheese; place one cheese triangle atop each bread triangle.
  6. (To make ahead, sprinkle with a little flour; cover and chill several hrs.)
  7. Sprinkle each triangle with some of the remaining Parmesan cheese.
  8. Fry 2 or possibly 3 at a t time, cheese side down, in deep warm fat (365 degrees) about 2 min or possibly till golden brown, turning once.
  9. Drain on paper toweling; serve hot.
  10. Makes 40.
