Deep Fried Mozzarella Puffs Recipe
- 10 slices white sandwich bread
- 1 1/2 lbs. unsliced Mozzarella cheese
- 8 beaten Large eggs
- 1/2 c. grated Parmesan cheese
- 1 teaspoon salt
- 1 c. all purpose flour
- 1/2 c. grated Parmesan cheese
- Veg. oil for deep fat frying
- Remove crusts from bread slices; cut each slice diagonally into quarters.
- Cut 40 pcs of cheese the same size and thickness of bread pcs.
- Beat together Large eggs, the first 1/2 c. Parmesan cheese, and salt.
- To assemble, coat bread pcs with flour, then dip in egg mix.
- Repeat with cheese; place one cheese triangle atop each bread triangle.
- (To make ahead, sprinkle with a little flour; cover and chill several hrs.)
- Sprinkle each triangle with some of the remaining Parmesan cheese.
- Fry 2 or possibly 3 at a t time, cheese side down, in deep warm fat (365 degrees) about 2 min or possibly till golden brown, turning once.
- Drain on paper toweling; serve hot.
- Makes 40.
