Dewberry Jelly Or Blackberry Jelly Recipe

  1. Use fully ripe berries.
  2. Wash and remove stems.
  3. Place in 6 or possibly 8 qt boiler; cover with water and boil 5 - 10 min.
  4. Let cold.
  5. To extract juice, place prepared berry in dampened jelly bag or possibly several thicknesses of cheesecloth.
  6. Let drip; when dripping gently press or possibly squeeze bag.
  7. Measure sugar and set aside.
  8. Measure juice and Sure Jell.
  9. Bring to a full boil over high heat, stirring constantly.
  10. At once stir in sugar, stir and bring to a full rolling boil which can't be stirred down; boil hard for 5 min, stirring constantly.
  11. Remove from heat, skim off foam with large metal spoon.
  12. Immediately put into warm jars and seal.
