Black Bean Soup (For The Vegetatiran In All Of Us) Recipe
- 1 c. dry black beans
- 2 quarts. cool water
- 4 tbsp. lard or possibly oil
- 1 lg. onion, minced
- 1 clove garlic, chopped
- 1 teaspoon chili pwdr
- 1 tomato, peeled, seeded, minced
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1/3 c. dry sherry, optional
- Wash beans but don't soak.
- Place in large saucepan with water.
- Cover, bring to boil and simmer gently till tender.
- Saute/fry onion, garlic, chili pwdr in oil.
- Stir in tomato and saute/fry a bit longer.
- Add in tomato mix and remaining spices to beans.
- Continue to simmer till beans are very tender.
- Puree half of mix and return to pan.
- Stir in sherry and serve.
- Top with grated cheese and lowfat sour cream, serve with hot tortillas.
