Mini Pear Brie Bites
- 2 whole Refrigerated Pie Crusts
- 1- 1/2 cup Pear, Finely Chopped (peeled If Desired)
- 1 Tablespoon Brown Sugar
- 18 teaspoons Ground Red Pepper Flakes
- 1 Tablespoon Honey
- 24 cubes Brie Cheese, Rind Removed
- 13 cups Chopped Pecans (optional)
- Heat oven to 375 degrees F. Grease or spray 24 mini muffin cups.
- Remove pie crust from pouch; place crust flat on lightly floured surface.
- If necessary, press out folds or creases.
- With a 2 1/2-inch round cutter, cut 12 rounds.
- Repeat with second crust.
- Press rounds in bottom and up sides of 24 miniature muffin cups.
- In small bowl, mix pear, brown sugar, red pepper and honey.
- Place 1 cheese chunk in each cup.
- Top with 1 heaping teaspoon pear mixture.
- Sprinkle with pecans.
- Bake 15 to 20 minutes or until edges are deep golden brown.
- Cool 5 minutes; remove from muffin pans.
- Serve warm.
