Harvest Chicken & Vegetable Bake
- 4 stalks celery, coarsely chopped
- 1 large onion, coarsely chopped Safeway 1 lb For $1.49 thru 02/09
- 2 carrots, coarsely chopped Target 2 lb For $3.00 thru 02/06
- 1 sweet potato (5-1/4 oz./150 g), cubed
- 1/4 cup Kraft Zesty Italian Dressing
- 4 small boneless skinless chicken breasts (1 lb./450 g)
- 1 pouch Shake'N Bake Extra Crispy Original Coating Mix
- 1/4 cup Kraft 100% Parmesan Grated Cheese
- Heat oven to 400 degrees F. Toss vegetables with dressing; spoon half into 13x9-inch baking dish.
- Bake 30 min., stirring after 15 min.
- Coat chicken with coating mix as directed on package; place in single layer next to vegetables.
- Bake 20 min.
- or until vegetables are tender and chicken is done (170 degrees F).
- Top with cheese; bake 5 min.
- or until lightly browned.
