Pasta in tomato mascarpone cheese sauce.

  1. Boil pasta in salted water ( Al dente)
  2. Make sure pasta is rinsed after boiling (Al dente).
  3. In a saucepan (medium temperature) add olive oil.
  4. Add freshly sliced tomatoes.
  5. Simmer for 10 to 15 minutes or until it turns into a sauce.
  6. Stir gently.
  7. Add a few tablespoons of water if sauce becomes too thick.
  8. Add all the herbs and seasoning (pimentoes, black pepper, salt etc)
  9. Add mascarpone cheese and stir until it melts.
  10. Reduce heat to the lowest
  11. Add the pasta to the sauce.
  12. Add cheese and stirr gently.
  13. Add the steamed broccoli and parsley.
  14. Top with cheese and serve.
