Reveler's Relish
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 cucumber (peel if waxed)
- 12 cup red onion, finely chopped
- 12 cup cider vinegar
- 14 cup honey
- 12 teaspoon sea salt
- 12 teaspoon dry mustard powder
- 12 teaspoon ground celery seed
- 12 teaspoon cinnamon
- 14 teaspoon allspice
- Remove seeds from the peppers.
- Finely chop the peppers and the cucumber.
- Combine chopped vegetables with the remaining ingredients.
- This relish can be eaten right away but it is better if allowed to sit for several hours.
- Store it in a covered container in the refrigerator.
