sig's Garlic, lentil and mushroom soup
- 12 clove garlic,peeled and crushed
- 1 tbsp olive oil
- 1 tbsp melted butter
- 1 small onion, chopped
- 15 ml rose wine
- 1 liter good vegetables stock
- 100 grams mushrooms chopped
- 175 grams canned lentils (I use puy)
- 1 tbsp fresh parsley chopped
- 1 pinch cayenne pepper
- 4 slice bread for croutons
- 3 tbsp plain flour
- Crush the garlic and chop onion finely, melt butter and genfly cook until soft do not brown.
- Add flour and cook for two minutes over low heat stir in the wine and the stock.
- the mushrooms and lentils.
- Simmer for 30 minutes.
- take of heat and blend until smooth.
- sprinkle in the chopped parsley and season with cayenne pepper
- cube bread , fry until golden brown,toss in garlic salt, set aside
- saute a few slices of mushrooms and garlic and sprinkle over soup with croutons to garnish
