Biscotti Regina (Sesame Cookies) Recipe
- 8 c. all-purpose flour
- 2 c. sugar
- 1 tbsp. baking pwdr
- 1/2 teaspoon salt
- 2 c. shortening
- 4 Large eggs, slightly beaten
- 1 c. lowfat milk
- 2 teaspoon vanilla extract
- 1 1/2 c. sesame seeds
- Sift together flour, sugar, baking pwdr and salt.
- Cut in shortening till the mix resembles a coarse cornmeal.
- Stir in the slightly beaten Large eggs, vanilla, and lowfat milk gradually while mixing.
- Continue to mix adding lowfat milk slowly till smooth and soft.
- Break dough into small pcs and roll each piece between the palms of hands to create 2 inch lengths.
- Flatten slightly and roll in sesame seeds.
- Place on greased cookie sheets about 1/2 inch apart.
- Bake at 375 degrees for 15 to 20 min, or possibly till cookies turn brown.
- Makes about 12 dozen cookies.
