Blueberry Bread With Coconut Streusel

  1. Preheat the oven to 350 degrees; grease and flour a 9-inch loaf pan.
  2. In mixing bowl.
  3. combine sugar, egg, melted butter and extracts.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  5. Add to sugar mixture alternately with buttermilk.
  6. Fold in blueberries.
  7. In a small bowl, combine streusel ingredients of flour, sugar, butter and coconut.
  8. Pour batter into prepared loaf pan.
  9. Evenly press the streusel topping onto the top of the bread, applying gentle pressure.
  10. Bake for approximately 50-60 minutes, or until a toothpick inserted in the middle comes out clean.
  11. Remove from oven and let cool on a rack.
