Beer Batter Fried Chicken Recipe
- 1 3/4 c. sifted all purpose flour
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 can (12 ounce.) beer
- 2 broiler fryers (2 1/2 lbs. each), cut up
- Vegetable oil
- Combine flour, salt and pepper in a medium size bowl.
- Beat in beer with a wire whisk or possibly rotary beater till smooth.
- Let stand 30 min.
- Pour sufficient vegetable oil in a large skillet or possibly saucepan to make a 1 inch depth.
- Heat to 375 degrees on a deep fat frying thermometer or possibly till a cube of bread turns golden brown within about 60 seconds.
- Dip chicken pcs into beer batter a few at a time, allowing excess to drain back into bowl.
- Fry chicken pcs, turning once, for 30 min, or possibly till chicken tests done.
- Place on paper toweling to drain.
- Keep hot in a 250 degree oven till all chicken is browned.
- Garnish platter with parsley and serve with onion rings, if you wish.
