Quinoa and Raspberry Flan
- 13 cup natural cane sugar
- 14 teaspoon fine sea salt
- 3 large eggs
- 1 14 cups milk
- 2 teaspoons lemon zest
- 12 cup quinoa
- 1 12 cups raspberries (or blackberries or blueberries)
- In large bowl, whisk together sugar, salt, eggs, milk and lemon zest until blended.
- Stir in quinoa flakes.
- Pour mixture into prepared baking dish and sprinkle with raspberries.
- Bake at 350 for 35-40 minutes or until set at center and golden.
- Let cool for 20 minutes before serving.
