Turkey Cutlets with Apple Stuffing
- 2 tsp. olive oil
- 1 lb. turkey-breast cutlets
- 1/4 tsp. dried thyme
- 1/4 tsp. salt
- .13 tsp. ground black pepper
- 1 small onion
- 1 lb. Rome Beauty or Fuji apples
- .67 c. water
- 1 1/2 c. stuffing mix for chicken
- 1/4 c. fresh parsley leaves
- In 12-inch nonstick skillet, heat oil over medium-high heat until hot.
- Pat cutlets dry with paper towels and sprinkle thyme, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper on both sides to season.
- Add cutlets to skillet and cook 4 to 5 minutes or until turkey loses its pink color throughout, turning over once.
- Transfer turkey to warm plate; cover with foil to keep warm.
- To same skillet, add onion and cook 4 minutes or until onion begins to brown.
- Add apples and cook 4 minutes longer or until they begin to soften.
- Add water; heat to boiling over high heat.
- Stir in stuffing mix until evenly combined; cover skillet and remove from heat.
- Let stand 5 minutes.
- To serve, with fork, fluff stuffing and stir in parsley.
- Serve with cutlets.
