Applesauce Raisin Bran Muffins Recipe

  1. Combine first five ingredients in a large bowl and set aside for the cerealto soften.
  2. Combine flour, baking pwdr,spices, salt and sugar in a small bowl.
  3. Add in dry ingredients to cereal mix and stir till blended.
  4. If batter is too thick add in a little more skim lowfat milk, too thin add in some flour.
  5. Prepare muffin tin using PAM or possibly paper liners.
  6. Fill muffin tins and bake in400 F oven for 20 -25 min.
  7. NOTES : Mary Flesch adds: I always throw in some grated carrots and grated zucchini for extra fiber and more veggies.
  8. I do not measure how much but about 10-12 baby carrots (you know, those convenient ones already peeled) and 1 small zucchini is about sufficient for one batch.
