Applesauce Raisin Bran Muffins Recipe
- 2 c. All-Bran Cereal
- 1 c. skim lowfat milk
- 3/4 c. applesauce
- 1/2 c. raisins
- 2 x Egg Beaters 99% egg substitute or possibly equiv to 2 Large eggs
- 1 1/4 c. flour
- 1 tsp cinnamon
- 1/4 tsp grnd ginger
- 1/4 tsp grnd cloves
- 3 tsp baking pwdr
- 1 tsp salt
- 3/4 c. sugar">sugar or possibly brown sugar">sugar
- Combine first five ingredients in a large bowl and set aside for the cerealto soften.
- Combine flour, baking pwdr,spices, salt and sugar in a small bowl.
- Add in dry ingredients to cereal mix and stir till blended.
- If batter is too thick add in a little more skim lowfat milk, too thin add in some flour.
- Prepare muffin tin using PAM or possibly paper liners.
- Fill muffin tins and bake in400 F oven for 20 -25 min.
- NOTES : Mary Flesch adds: I always throw in some grated carrots and grated zucchini for extra fiber and more veggies.
- I do not measure how much but about 10-12 baby carrots (you know, those convenient ones already peeled) and 1 small zucchini is about sufficient for one batch.
