Hawaiian Mochi Fried Chicken
- 3 lbs chicken breasts, boneless and skinless and cut finger-size nuggets
- 34 cup mochiko sweet rice flour (glutinous rice flour)
- 34 cup cornstarch
- 34 cup sugar
- 34 cup soy sauce
- 1 12 teaspoons salt
- 6 eggs, beaten
- 2 stalks green onions, chopped fine
- 6 garlic cloves, minced
- Set the chicken aside.
- Combine the ingredients and mix well.
- Add the chicken.
- Marinate overnight.
- In a wok add oil about half way up and heat to 350 add in small amount of the chicken deep fry until golden brown.
- Drain onto a rack.
